The beginning of fall is my favorite time of year. The weather is still warm, it doesn’t get dark too soon, and all my FAVORITE seasonally flavored products make their yearly appearance.
If you know me, you know I eat and make pumpkin-flavored things all year round, but I LIVE for all the unique fall products that get released this time of year. From salted caramel and gingerbread to apple cinnamon and pecan pie. I love them ALL! But a true favorite through and through is anything MAPLE flavored.
No Cow’s seasonal Maple Protein Bar is BACK so obviously, I’ve been thinking up tons of seasonal treats to make with them! 🙂
No Cow Seasonal Protein Bars
In addition to Maple, No Cow’s Pumpkin Pie Bar is also back! These bars aren’t dipped, but they have the classic soft No Cow texture and even some crispy pea protein bits throughout! Both are perfectly flavored and so great to welcome the fall season.
Pumpkin Pie – Move over PSL! This Pumpkin Pie flavor is the only pumpkin snack you’ll need this fall. Just as flavorful as your favorite fall pie, perfectly spiced and sweet, and PACKED with protein!
Maple – A tried and true decadent fall flavor that never gets old. It tastes like a fresh stack of pancakes (or waffles!) drizzled with fresh maple syrup. But no added sugar and tons of protein of course!
Both bars are amazing, but the Maple Bar sparked my baking brain! 😉
STUFFED Vegan Maple Waffle Muffins
These easy-to-make muffins are perfect for when you’re craving something sweet but want a protein-packed snack to keep you satisfied. The recipe only makes 6 muffins, but feel free to double or triple it to have healthy muffins in your fridge all week long! In addition to being delicious, these vegan muffins are:
- no added sugar (only sweetened with dates!)
- packed with protein
- super soft and fluffy!

Not only do these muffins taste amazing, but they’re so fun to make with their “waffled” top! One reason waffles are better than pancakes is that they have the perfect little crevices to house ALL the syrup. Similarly, these muffins are perfect for drizzling syrup on for an extra bit of sweetness! 😉

STUFFED Vegan Maple Waffle Muffins
- Prep Time: 10 minutes
- Cook Time: 20 minutes
- Total Time: 30 minutes
- Yield: 6 muffins 1x

Preheat oven to 350 degrees F. In a high spend blender, blend together dates with water until puréed smooth. Add in oat flour, spices, maple extract, and baking powder. Purée until smooth.
Line a muffin pan with 6 aluminum muffin tins and spoon in about 2 tbsp of batter into each one. Press a 1/3 piece of the No Cow Bars into each muffin tin and then fill each one with another 2 tbsp of batter or as much as it takes to cover the bar.
Bake for 20 mins. Remove from oven and let cool completely. To make the waffle top, heat a mini waffle iron until hot and spray with cooking spray. Press each muffin one by one onto the waffle iron and hold for ~30 seconds. Repeat until each muffin is complete. Serve with a drizzle of maple syrup on top or as is!
